A simple, bright, and healthy frozen treat made with creamy cottage cheese and bursts of sweet-tart blueberries.

- 2 cups cottage cheese
- 1 cup blueberries (fresh or frozen)
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup granola (optional)
- Pinch of salt
Instructions
- Gather all ingredients and line a baking sheet or tray with parchment paper. If using frozen blueberries, thaw briefly and drain any excess liquid.
- In a mixing bowl, combine cottage cheese, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until mostly smooth.
- Gently fold in the blueberries so they distribute evenly. Pour the mixture onto the prepared baking sheet and spread it into an even layer about 1/4-1/2 inch thick.
- Sprinkle granola on top if using, then transfer to the freezer. Freeze for at least 2–3 hours or until solid. Once frozen, break into pieces and serve immediately.
Notes
For a silkier texture, blend the cottage cheese; for more texture, leave it slightly lumpy. Store in an airtight container for up to 1 month.
