Description

A simple, bright, and healthy frozen treat made with creamy cottage cheese and bursts of sweet-tart blueberries.


Ingredients

Scale
  • 2 cups cottage cheese
  • 1 cup blueberries (fresh or frozen)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup granola (optional)
  • Pinch of salt

Instructions

  1. Gather all ingredients and line a baking sheet or tray with parchment paper. If using frozen blueberries, thaw briefly and drain any excess liquid.
  2. In a mixing bowl, combine cottage cheese, honey or maple syrup, vanilla extract, and a pinch of salt. Mix until mostly smooth.
  3. Gently fold in the blueberries so they distribute evenly. Pour the mixture onto the prepared baking sheet and spread it into an even layer about 1/4-1/2 inch thick.
  4. Sprinkle granola on top if using, then transfer to the freezer. Freeze for at least 2–3 hours or until solid. Once frozen, break into pieces and serve immediately.

Notes

For a silkier texture, blend the cottage cheese; for more texture, leave it slightly lumpy. Store in an airtight container for up to 1 month.
