Description

A delightful pasta salad blending the classic flavors of a Big Mac with rotini pasta, perfect for summer gatherings.


Ingredients

  • 8 ounces rotini pasta
  • 1 pound ground beef
  • 1 teaspoon olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced pickles
  • 1 cup shredded cheddar cheese
  • 1/4 cup ketchup
  • 1/4 cup mayonnaise
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Lettuce for garnish

Instructions

  1. Cook the rotini pasta according to package instructions. Once al dente, drain the pasta and set it aside to cool.
  2. Heat the olive oil in a large skillet over medium heat. Add the ground beef and diced onion, cooking until the beef is browned and the onion is tender. Season with salt and pepper to taste. Once cooked, drain any excess fat from the skillet.
  3. Combine the cooked pasta, the beef mixture, diced pickles, and shredded cheddar cheese in a large mixing bowl.
  4. Whisk together the ketchup, mayonnaise, and mustard in a separate bowl until well blended. Pour this creamy dressing over the pasta salad mixture and toss everything together until evenly coated.

Notes

Serve the pasta salad chilled with fresh lettuce on top. Store leftovers in an airtight container in the refrigerator for up to 3 days.
