- 4 boneless chicken breasts
- 1 bunch asparagus
- 2 lemons (juiced)
- 3 cloves garlic (minced)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano
- 1 teaspoon paprika
Instructions
- Preheat your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and trim asparagus ends.
- Mix lemon juice, garlic, olive oil, oregano, paprika, salt, and pepper in a bowl.
- Place the chicken in a baking dish and pour the marinade over it, then add asparagus around.
- Bake for 25-30 minutes until chicken reaches 165°F (74°C) and asparagus is tender.
- Remove from the oven and let chicken rest for 5 minutes before serving.
Notes
For extra flavor, reserve some marinade to drizzle after baking. Serve with rice, quinoa, or salad.
