- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 1/2 cups old-fashioned oats
- 1 cup pecans, chopped
- 1/2 cup pecan pie filling (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Prepare the pecans and let the butter soften.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing well.
- Whisk together the flour, baking soda, and salt in a separate bowl. Gradually add the dry ingredients to the wet mixture and mix until just combined.
- Add the oats and chopped pecans, stirring to evenly distribute. If using, gently fold in the pecan pie filling.
- Drop spoonfuls of dough onto the prepared baking sheet, spacing them 2 inches apart. Bake for 10–12 minutes or until edges are lightly golden and centers are soft.
- Allow cookies to cool on the baking sheet for 3–5 minutes, then transfer to a wire rack to cool completely.
Notes
For best texture, use room temperature butter and avoid overmixing. Store in an airtight container to maintain freshness.
