- 1 cup mixed salad greens
- 1/2 cup carrots, julienned
- 1/2 cup red bell pepper, sliced
- 1/4 cup green onions, sliced
- 1/2 cup cashews, roasted

- 2 tablespoons sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey or sugar
- 1 teaspoon grated ginger
- 1 teaspoon minced garlic
Instructions
- In a large bowl, combine the cooked chicken, mixed salad greens, julienned carrots, sliced red bell pepper, and sliced green onions.
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey (or sugar), grated ginger, and minced garlic until smooth.
- Pour the dressing over the salad ingredients and toss well to combine.
- Top the tossed salad with the roasted cashews just before serving.
Notes
Serve chilled or at room temperature. Store leftovers without cashews for up to 2 days.
