Description

Ingredients

  • 2 pounds beef tenderloin
  • 4 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the beef tenderloin dry with paper towels and season with salt and pepper.
  2. In a small bowl, mix the softened butter, minced garlic, and chopped parsley until well combined.
  3. Rub the beef tenderloin with olive oil. Sear the beef on all sides in a hot skillet for 2–3 minutes per side.
  4. Transfer the beef to a baking dish and spread the garlic butter mixture on top. Roast for about 25–30 minutes until your desired doneness is reached.
  5. Let the beef rest for 10 minutes before slicing to allow juices to redistribute.
  6. Slice against the grain into thick medallions and serve immediately.
