- 2 pounds beef tenderloin
- 4 tablespoons unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Pat the beef tenderloin dry with paper towels and season with salt and pepper.
- In a small bowl, mix the softened butter, minced garlic, and chopped parsley until well combined.
- Rub the beef tenderloin with olive oil. Sear the beef on all sides in a hot skillet for 2–3 minutes per side.
- Transfer the beef to a baking dish and spread the garlic butter mixture on top. Roast for about 25–30 minutes until your desired doneness is reached.
- Let the beef rest for 10 minutes before slicing to allow juices to redistribute.
- Slice against the grain into thick medallions and serve immediately.
Notes
Serve with roasted potatoes or a simple salad. Store leftovers in an airtight container for up to 3 days.
