- 2 tablespoons honey
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon dried thyme (optional)
Instructions
- Preheat the oven to 400°F (200°C). Wash and trim the mixed vegetables. Cut larger items into even pieces.
- In a small bowl, whisk together honey, balsamic vinegar, olive oil, and a pinch of salt and pepper. Pour the mixture over the vegetables and toss well.
- Spread the coated vegetables on a baking sheet in a single layer. Roast for 25–30 minutes until tender and slightly caramelized, stirring once halfway through.
- Remove from the oven and sprinkle with dried thyme if desired. Let rest a minute before serving.
Notes
For added flavor, consider using fresh rosemary or parsley instead of thyme. Frozen vegetables can be used; just adjust cooking time.
