Description

Ingredients

  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups milk
  • 2 large eggs
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup fruit (e.g., blueberries, bananas, chopped apples)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a baking dish (an 8×8 inch or similar size works well) with butter or oil.
  2. In a large bowl, mix together the oats, brown sugar, baking powder, salt, and cinnamon until evenly combined.
  3. In a separate bowl, whisk together the milk, eggs, melted butter (or coconut oil), and vanilla extract until smooth.
  4. Combine the wet ingredients with the dry ingredients and stir until well mixed. Fold in the fruit of your choice gently.
  5. Pour the mixture into the prepared baking dish and spread it evenly. Bake for 30–35 minutes until set and slightly golden on top.
  6. Let it cool for a few minutes before slicing. Serve warm with milk, yogurt, or a drizzle of honey.
