Description

A creamy, cheesy dip that captures the delicious flavors of elote, perfect for gatherings or cozy nights in.


Ingredients

  • 2 cups corn (fresh, frozen, or canned)
  • 1 cup sour cream
  • 1 cup cream cheese, softened
  • 1 cup shredded Mexican cheese blend
  • 1/2 cup mayonnaise
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped cilantro for garnish
  • Tortilla chips for serving

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine corn, sour cream, cream cheese, shredded cheese, mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper in a large mixing bowl. Mix everything until well blended and creamy.
  3. Spread the mixture into a baking dish and smooth the top evenly. Bake for 20-25 minutes, or until the dip is bubbly and golden brown on top.
  4. Remove from the oven, garnish with chopped cilantro, and serve warm alongside tortilla chips for dipping.
