- 2 ripe avocados, diced
- 2 ripe mangoes, diced
- 1/4 red onion, thinly sliced
- 1 red bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 2 limes
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Prepare all produce first. Peel and dice the mangoes and avocados. Thinly slice the red onion and dice the red bell pepper. Chop the cilantro. Place the avocado and mango in a large mixing bowl so they are ready to combine.
- Whisk together the juice of 2 limes, 2 tablespoons of olive oil, and a pinch of salt and pepper in a small bowl. Taste and adjust salt if needed. The dressing should be bright and tangy.
- Pour the lime dressing over the avocado, mango, red onion, bell pepper, and cilantro. Gently toss the salad with a wide spoon to coat, taking care not to mash the avocado. Toss just until everything is evenly dressed.
- Serve right away or chill the salad in the refrigerator for 15–20 minutes to let flavors meld. If you chill, stir gently before serving. Add a final sprinkle of cilantro and a grind of black pepper.
Notes
For best texture, consume within 24 hours. Store in an airtight container and press plastic wrap onto the salad surface to reduce browning.
